Cracker Chicken (Sun-Dried Tomato Basil)


Ingredients

4 chicken cutlets

Half box Simple Mills crackers (SD

Tomato Basil)

2 eggs

olive oil to coat pan

Instructions

Trim chicken cutlets if needed and

pat dry with paper towels

Scramble the eggs in a bowl

Place the crackers in a bag & crush

(potato masher, mallet, hands)

Coat each cutlet in egg

Then coat each cutlet in crushed

crackers

Heat oil in pan

Place cutlets in hot oil

Cook until coating is brown and

chicken is thoroughly cooked
